Overview
The Expo (Food Expeditor) at FastTrax Entertainment serves as the critical communication bridge between the kitchen and front-of-house teams. This position is responsible for ensuring every food order leaves the kitchen accurately, efficiently, and according to company standards.
The Expo manages the flow of completed orders through the service window, verifies that each dish is prepared and presented correctly, and coordinates with cooks, food runners, and servers to ensure guests receive their food promptly. Orders may be delivered throughout the facility, including the dining area, duckpin bowling lanes, VIP areas, private events, and lounge spaces.
This is a fast-paced position that requires strong communication, organization, attention to detail, and the ability to remain calm and focused during high-volume service.
Key Responsibilities
- Manage the kitchen pass-through and expo window during service.
- Coordinate the timing and completion of food orders to ensure all items for a ticket are ready together whenever possible.
- Review all outgoing orders for accuracy, portioning, presentation, temperature, and overall quality.
- Verify that orders include the correct sides, sauces, garnishes, modifications, and special requests.
- Communicate clearly and professionally with cooks, food runners, servers, bartenders, and managers.
- Organize and prioritize tickets during high-volume periods to maintain an efficient flow of orders.
- Monitor ticket times and communicate delays or issues to the appropriate team members.
- Ensure food runners and servers receive the correct orders and understand where each order should be delivered.
- Assist with basic garnishing, plating, finishing, and packaging of food orders when needed.
- Pay close attention to allergy notifications, dietary requests, and special order modifications.
- Maintain a clean, organized, and sanitary expo station and service window throughout the shift.
- Keep necessary supplies, including utensils, condiments, sauces, takeout materials, and service items, properly stocked.
- Assist with communication between the kitchen and front-of-house teams regarding unavailable items, order changes, delays, or guest requests.
- Support special events, parties, group functions, and facility buyouts by helping coordinate high-volume food service.
- Assist with opening, closing, cleaning, and restocking responsibilities as assigned.
- Follow all company food safety, sanitation, cleanliness, and workplace safety standards.
- Perform additional duties as assigned by the Kitchen Manager, Lead Cook, or management team.
Qualifications
- Strong attention to detail and commitment to order accuracy.
- Excellent verbal communication and teamwork skills.
- Ability to multitask and manage multiple orders simultaneously.
- Strong sense of urgency and ability to work efficiently in a fast-paced environment.
- Ability to remain calm, organized, and professional during high-volume service.
- Ability to read and understand food tickets, order modifications, and special requests.
- Dependable, punctual, and willing to support other team members as needed.
- Previous experience as an Expo, Food Runner, Server, Cook, or in another restaurant position is preferred but not required.
- Must be willing to learn FastTrax menu items, presentation standards, and food service procedures.
Physical Requirements
- Must be able to stand and walk for extended periods of time.
- Must be able to work in a fast-paced kitchen environment.
- Must be able to lift, carry, push, or pull up to 30 pounds.
- Must be able to bend, reach, twist, and perform repetitive movements throughout the shift.
- Must be comfortable working around hot food, kitchen equipment, and changing temperatures.
Availability Requirements
- Must have flexible availability based on business needs.
- Evening, weekend, and holiday availability is required.
- Must be available to work during peak business periods, special events, group functions, and facility buyouts as scheduled.
